How it tastes
All vintages of Purist Souvignier gris are made dry. 2020: amber sheen, spicy skin-contact character, ripe stone fruit, firm structure. 2023: mineral, delicate stone fruit aromas, fermented on the skins, unfiltered. The acidity of Purist Souvignier gris ranges from 5,6 to 5,7 g/l.
Soil and cover crops
The rows where Purist Souvignier gris grows are green all year, sown with clover, phacelia and buckwheat instead of grass. We use no herbicides.
